Lots Of Information!

It is May already and while the sweet fragrance of my Hyacinths has faded along with their blooms, my Tulips are up, the Phlox is still vibrant, and my Irises and Day Lilies are on their way!  I love this season!

There is so much information for you -  a spring basket of useful information stuff!

First things first - How are you with your goals for 2015?  Are you where you envisioned yourself to be at this time?  If not, take a minute and evaluate why not.  Go through all the reasons, then pull up your big girl / big boy panties and get on it!  If you need help with achieving your vision of your best you, give me a call, I can help get you get back on track.

Here are some recipes and ideas that I love for getting more good-for-you veggies in.  This was inspired by Yuri Elkain, author of The All Day Energy Diet.

Grill Everything
-All veggies taste great from the grill... mushrooms, onions, tomatoes, zucchini, peppers... I could go on and on!  Left over grilled veggies are great for your morning egg scramble, and your lunch salad too.  Throw more on than you think you need.  They are great as a snack too.
-Have you every tried grilled apricots, plums, nectarines and peaches?  So delicious, the grill brings out such sweetness.  Great for sweetening your morning green smoothie.

Go Topless
- How about slicing some sweet potatoes or yams about 1/4" thick and grilling until a bit soft.  Let cool, then use those as your "bun" for your hamburger.
- Or, use Bibb, Iceberg, Green or Red Leaf lettuce as your "bun".  Or at least the top bun.
- Ditch the taco shell with all that GMO corn product and use lettuce as your taco shell.

Think "Outside the Box "- pizza that is...
So, instead of a greasy pizza from a box that gets soggy and gross, use cauliflower instead!
Line a baking sheet with parchment paper and pre-heat oven to 400.
Grate a head of cauliflower with a box grater and then microwave until soft, about 7 minutes.
Once cooled, mix in 1 egg, about 1 cup of mozzarella cheese and about 1/2 cup parmesan cheese, oregano, salt and pepper.
Place on the sheet and form into whatever flat shape you want.  Cook for about 20 minutes.  
Add all other ingredients you choose and bake for another 10 minutes.

My favorite is Hot and Cold Soup from a great place in Aruba - I had it once and was hooked for life!

Beautiful, Tangy Fresh Summer Salad
Shave or chop 1 apple, 1 jicama, and 1 cucumber.  Drizzle with lime juice and sprinkle with cilantro.  May add salt and pepper as desired.
